So this is a recipe I can use peppers from my garden and buy everything else from the grocery store for relatively cheap! It is a quick and easy weeknight recipe that I love to make especially when I am busy.
Ingredients:
A piece of salmon (I prefer with skin on) size of your choice…It is usually a safe bet to have a little more than 6 oz of salmon per person.
2 bell peppers, multicolor is more fun.
One red onion
2 tbl. terriaki (you may have to increase this depending on how big your piece of salmon is)
1 tbl. soy
3 tbl. panko bread crumbs
Preheat oven to 375. Grease a baking pan. Add the salmon and coat with terriyaki and soy using either your hand or a brush. cover with panko bread crumbs. Slice the red onion and surround the salmon with it. Then slice the bell peppers and cover the red onion with them, surrounding the salmon. Bake for about 20 minutes, depending on thickness of your salmon, and until it is cooked to your liking. Enjoy!
